Mexican Chicken Chili


I got this recipe from the Taste of Homes magazine and was excited to use it because it fit into both my soup and mexican day! It smelled so good cooking all day and was SO easy to make because I just threw everything into the crockpot. Really yummy if you remember it's a chili and not a soup! We give it 3 1/2 stars.


Ingredients

  • 1 pound boneless skinless chicken breasts, cubed (I used some left over rotisserie chicken I had frozen in the fridge)
  • 1 tablespoon canola oil
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained (I only had stewed tomatoes)
  • 2 cups frozen corn
  • 2 cans (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) reduced-sodium chicken broth
  • 1 can (4 ounces) chopped green chilies
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Directions

  • In a small skillet, brown chicken in oil. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low for 5-6 hours or until chicken is no longer pink. Yield: 6 servings.
  • Top with shredded cheese and sour cream

Feeding Brian

Well I decided to create this blog to help me be more motivated to cook for my wonderful hubby. I may ask for meal ideas from you and I will post pictures and recipes on here. I will also tell you how they went over with a rating from 1 to 5, with 5 being the best.
I have a big problem with trying new recipes. I HATE spending alot of time on something and then hating how it tastes and I don't feel like I know enough about food to get an idea of what would taste yummy.
I want to try and have a different genre of food each day. So Monday is mexican, Tuesday is soup, Wednesday is pasta, Thursday is casserole, Friday is pizza/breakfast, Saturday is oriental/misc, and Sunday is meat and potatoes. I plan on switching these around ALOT but this is my basis so we don't get stuck in a rut (this happened when we were first married and I made cream of chicken and rice VERY frequently).
